Basically I took quinoa flour, coconut oil and coconut milk and used that to make a crust. Then was able to follow a blueberry pie recipe except for the cinnamon. Yay birthday safes!!! We have come a long way
Zucchini Pickles
Apples is a safe,therefore we have apple cider vinegar. Zucchini check. Salt , sugar and water are freebies. Therefore After scrolling some bloggers life story about zucchini pickles I took this recipe:

And basically made the brine but with abc instead of white. Of course no herbs. We will see how they turn out!
Spoiler…awful. Full pickles without dill and garlic are awful. So I just added a ton of sugar so the ratio was closer to 1 cup vinegar, 3/4 cup sugar and I am hoping they are salvageable

Rice Free Gluten Free Mac n “Cheese”
Today I am attempting a Mac and Cheese substitute. Our current food trial is nutritional yeast…an essential cheesy tasting product present in almost all vegan cheeses. I basically took this recipient:

And dropped onions, garlic,lemon juice,chicken broth and mustard. I subbed carrots for butternut squash. I also doubled the nutritional yeast and added coconut aminos. Red lentil pasta is our go to in this crazy grain free fpies life, so red lentil twirly noodles it was.
Basically I cooked carrots (1lb) cauliflower (1 bag frozen) blended that with about a cup of coconut milk and added 6-8 tablespoons nutritional yeast and coconut aminos to taste.
The boy liked “cheese flakes” sprinkled on top of his “Mac n cheese” and so to try to get the volume up I obliged. Husband didn’t like it because the carrots made it too sweet, but we got the trial food in after a week of picky eating and I thought it tasted fine. Not like Mac n Cheese but FPIES kiddo has no reference point.
